Easy Freshly Milled Bread

Ingredients
  

  • 1 cup (202g) Einkorn or Spelt berries Optional. Or just use Hard red Wheat for all 3 cups/618g. I buy my Wheat berries from Azure Standard
  • 2 cups (416g) Hard Red Wheat
  • 1 TBSP (8g) Sunflower Lecithin
  • 2 tsp (12g) Sea Salt I like Himalayan Sea Salt
  • 1 TBSP (7g) Yeast I use Instaferm
  • 1.5 cups (342g) Warm Water
  • 1/2 cup (100g) Extra Virgin Olive Oil
  • 1/2 cup (162g) Honey

Equipment

  • Mixer
  • Non Stick 1lb Loaf Pan
  • Towel

Method
 

  1. Preheat oven to 350 degrees
  2. Measure your wheat berries and mill them fresh
  3. Add wet ingredients to the bowl of your mixer and mix well. (water, honey and oil)
  4. Add the remaining dry ingredients to the fresh flower and mix well. (sunflower lecithin, salt and yeast)
  5. Pour dry ingredients to the bowl of your wet ingredients. 
  6. Using the dough hook, mix on low until combined.
  7. Once combined turn the mixer on medium-low until the dough forms a ball and pulls away from the bowl. 
  8. Continue mixing until the dough forms a window pane (see picture above)
  9. Cover with damp towel and place in a warm place until doubled in size. (in the oven on the proof setting is what I do)
  10. Once doubled, dump the dough onto the counter and shape it into a sandwich loaf by rolling it up into itself and placing it in a bread pan seal side down. (for a very quick version see notes below)
  11. Cover with damp towel until doubled again
  12. Bake in a 350 oven for 30-45 minutes or until the inner temperature reaches 195-200 degrees.
  13. For best results wait an hr before cutting... but it you can't wait that long, devour it hot!

Notes

For a very quick option, you can shape the dough into a ball after its first rise and immediately bake in a pre-heated dutch oven. Here's how: (P.s this will get bread on the dinner table in about 1 hour!)
  • Pre-heat your dutch oven at 450-480 degrees.
  • Once your dough is mixed and has achieved its first rise (doubled in size), dump the dough onto the counter, shape it into a ball and place it onto a piece of parchment paper. 
  • Lifting from the edges of the parchment paper, carefully place the dough into the pre-heated dutch oven and cover with the hot lid. 
  • Bake for 30-45 minutes until the inside of the bread is 185-210 degrees.
